babies what i love to eat
bite they crispy tops off
nibble on they delicious eggy goodness *
Let’s say you have friends visiting from out of town, and you’re feeling a bit under the weather. It’s Sunday morning, and you’re sitting in the living room with your friends, drinking coffee and reading the New York Times. The question of breakfast is raised: to go out, or eat in? You don’t feel like going out, but you want to feed your friends something that’s extraordinarily yummy, yet easy to make. You suggest Dutch babies.** Your friend (let’s call her Janeen) squeees and bounces up and down on the sofa. That settles it. Turn on the oven and grab your cast iron skillets.
* Apologies to B. Kliban. And yes, I know the last line doesn’t scan or rhyme, but “eggy feet” didn’t do it for me.
** Thanks to Molly at Orangette for the recipe.

Slather mine with Meyer lemon and powdered sugar please.
I love making Dutch apple pancakes for guest. They look exactly like that, except you put an apple concoction on top. Easy, hands-free breakfast (unlike regular pancakes where you end up flipping all morning and ending up exhausted) that everyone loves.
DKM: You go for the classic accompaniments.
Raehan: The first baked pancake I ever ate (circa 1983 in Boston, MA) was topped with apples sauted in butter, brown sugar and spices. Yum. I offered apples this past weekend, but everyone wanted lemon and maple syrup.
